Les Marmitons Combine Old World French with a Touch of Molecular Gastronomy

Les Marmitons Toronto at Liaison College Oakville

Les Marmitons is a gastronomic and social club of gentlemen who share a common interest in fine food, wine and the culinary arts.   Members gain knowledge and experience in the preparation, and presentation of various fine cuisines under the direction of a specially selected professional chef.On Monday, September 24, the Toronto Chapter of Les Marmitons began their association with the Oakville campus of Liaison College, utilizing our space for their regular gatherings.  Head Chef Instructor, Mark Duncan, was selected to be their professional chef for the evening, leading the group in a cutting edge menu that included a bit of old world French with a touch of Molecular Gastronomy.

The menu consisted of courses as follows:

Amuse:  Peppered Chevre and Parmesan Tuille

Appetizer:  King Prawn Kebabs with Pea Brulee, Rocket Spaghetti and Porcini Foam

Palate Cleanser:  Beetroot Sorbet

Main:  Apple, Sage and Onion Stuffed Cornish Game Hen, Fondant Potato, Bread Sauce, Chestnut Puree, Cranberry Gelee, Sweet Potato String

Dessert:  Milk Chocolate Pear Mousse, Ginger Orange Coulis, Pear Ribbons

Afters:  Various selection of Carbonated Fruits

The first North American Chapter of Les Marmitons was established in Montreal in 1977. Since then, the interest in learning more about fine cuisine has led to the founding of chapters in 16 Canadian and US locations. With the growing interest in food and wine our membership continues to expand and benefit from our traditions of promoting friendship and gastronomy.

Liaison College Oakville is proud to be partnered with this group, and we look forward to many exciting dinners together.
