				<content:encoded><![CDATA[<p>The Canada wide chef competition, Taste Canada Cooks the Books, invites culinary students from across the country to make a dish from a top Canadian cookbook.</p>
<p>With the title of Canada’s best new student chef on the line, the completion is heightened and enhanced by the fact that the original chef creator of the dish and cookbook is on stage with those seeking the title of best student chef.</p>
<p>The student chef’s goal is to impress the panel of judges and create a dish worthy of earning them the title of Canada’s Best New Student Chef.  The competition is both friendly and fierce.   Mentors and judges have included such Canadian household names as Elizabeth Baird, Rose Reisman, and Christine Cushing.</p>

<p>The completion is part of Taste Canada’s goal to foster the next generation of culinary professionals through networking, exposure and the sharing of skills.  The Liaision Oakville team of Mick Benest, Craig Winterburn, and Ben Kaschuba received the great news of their top three finish a week after the competition at the Taste Canada Gala Awards at the Arcadian Court, Toronto.</p>

Roasted Chevre and Beet Salad with Candied Ginger. The salad portion consists of microgreens, which are pea shoots, corn flowers, baby beet shoots, as well as edible flower petals, sprinkled over the dish.</p></div>
<p>The 2 day competition is organized so that the Canadian cookbook authors mentor the student chefs in a mentoring program that is played out on stage, in front of a live audience, at the Royal Agricultural Winter Fair.</p>
<p>The Liaison College Oakville student team (supervised by Chef Mark Duncan) saw themselves with International Chef Martin Kouprie, the author of the Pangea Cookbook and executive chef and co-owner of Pangaea Restaurant.  Kouprie’s Pangaeas’ menus have won him accolades from Gourmet Magazine, Toronto Life, The Financial Post, and The New York Times all of which have all given Pangaea Restaurant their seals of approval.  Pangaea has also received the Wine Spectator Magazine Award of Excellence on multiple occasions.</p>
<p>The Liaison College team was supported by MicroGreen Farms.  Liaison College is very greatful for Microgreen Farm&#8217;s gracious donation of the products the school to used in the competition.</p>

<p>The Liaison Team from the Kitchener Campus was awarded with first place overall at the 2011 competition.</p>
<p>The new students at <a title="Liaison College" href="http://liaisoncollegeoakville.com/">Liaison College Oakville</a> are excited for the opportunity to show their skills next year in this national event and at the prospect of competing under the direction of Head Chef Mark Duncan, with the best student chefs of the country.</p>

<p>Staring guest Chef Douglas Sabine, the group of men helped to execute  the menu that Chef Sabine had created and prepared.</p>
<p>The group created, with instruction and guidance from Chef Sabine, amazing dishes such as a Roast Beet Salad topped fantastically with a Honey Balsamic Reduction.</p>
<p>When all the cooking had come to a close, the second portion of the evening began. The group all sat down together to enjoy good hearted conversation, wine pairings and of course the delectable meal!</p>

By demonstrating the preparation of spinach and cheese stuffed crepes the onlookers  watched while the tasty crepes were prepared before their eyes. <p><strong>Les Marmitons</strong> is a gastronomic and social club of gentlemen who share a common interest in fine food, wine and the culinary arts.   Members gain knowledge and experience in the preparation, and presentation of various fine cuisines under the direction of a specially selected professional chef.On Monday, September 24, the <a title="Toronto Chapter Les Marmitons" href="http://www.lesmarmitons.org/_lib/display_chapter1.php?chapter=Toronto&amp;lang=eng&amp;display=eng&amp;version=new">Toronto Chapter of Les Marmitons</a> began their association with the Oakville campus of Liaison College, utilizing our space for their regular gatherings.  Head Chef Instructor, Mark Duncan, was selected to be their professional chef for the evening, leading the group in a cutting edge menu that included a bit of old world French with a touch of Molecular Gastronomy.</p>
<p>The menu consisted of courses as follows:</p>
<p>Amuse:  Peppered Chevre and Parmesan Tuille</p>
<p>Appetizer:  King Prawn Kebabs with Pea Brulee, Rocket Spaghetti and Porcini Foam</p>
<p>Palate Cleanser:  Beetroot Sorbet</p>
<p>Main:  Apple, Sage and Onion Stuffed Cornish Game Hen, Fondant Potato, Bread Sauce, Chestnut Puree, Cranberry Gelee, Sweet Potato String</p>
<p>Dessert:  Milk Chocolate Pear Mousse, Ginger Orange Coulis, Pear Ribbons</p>
<p>Afters:  Various selection of Carbonated Fruits</p>
<p>The first North American Chapter of <a title="Les Marmitons" href="http://www.lesmarmitons.org/_lib/new_main1.php?displaypage=slider">Les Marmitons</a> was established in Montreal in 1977. Since then, the interest in learning more about fine cuisine has led to the founding of chapters in 16 Canadian and US locations. With the growing interest in food and wine our membership continues to expand and benefit from our traditions of promoting friendship and gastronomy.</p>
<p>Liaison College Oakville is proud to be partnered with this group, and we look forward to many exciting dinners together.</p>

				<content:encoded><![CDATA[<p>The recently installed organic hydroponic roof garden at Liaison Oakville had produced its first tomatoes and a bountiful crop it is.     Green roofs are the way of the future and it is nice to participate in the experiment of paving the way for the future.  </p>
<p>For those of you who haven&#8217;t been to our campus, the roof garden is just out side the main preparation area and is a welcomed little bit of green on student&#8217;s breaks.</p>
<p>The basil and other herbs are doing really well too.   They will be nice on some fall dishes.</p>
